The Best Brookie Recipe
Whenever I’m in the mood to get in the kitchen and do some baking, there’s always the dilemma of what I want to bake. Usually, my go-to items consist of cookies or brownies. I choose these two because they are both easy to whip together, and I know everyone in my family loves both.
What is a Brookie?
Cookies? Brownies? Now there is no need to choose when you can have both in one with our amazing chocolate chip brookie recipe!
A brookie is a brownie with spoonfuls of cookie dough baked inside! Oh… and it is delicious!
When I first discovered brookies, my family’s life was changed. Okay, maybe that’s a tiny bit dramatic, but seriously these are so darn good. It is truly a combination of the two best sweets ever, brownies and cookies, all in one delicious dish.
Best of all, they are as easy to make as any batch of cookies or brownies ever was. Simply using a box of brownie mix to make the brownie batter and mixing up your traditional batch of cookie dough. Then you just marble the two together and wahlah! you have your brookies.
Ingredients / Shopping List
- 1 box brownie mix + additional box ingredients (water, oil, eggs, etc.)
- 1 stick of salted butter, softened
- ⅓ cup granulated sugar
- ⅓ cup light brown sugar
- 1 egg
- ¾ tsp vanilla extract
- 1 cup + 2 tbsp all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- 1 ¼ cup semi-sweet chocolate chips
Additions & Substitutions
Brownie Mix: You can use any brand of boxed brownie mix that you prefer, and if you have a homemade brownie recipe that’s your favorite you can definitely use that instead.
Chocolate Chips: To mix things up and give your brookies a different flavor, you can use different types of chocolate chips. White chocolate, dark chocolate, milk chocolate, or butterscotch would all be delicious!
Pre-Made Cookie Dough: Want to make things EVEN EASIER? You can skip making the cookie batter and opt for refrigerated cookie dough! Trust me, there is no shame in shortcuts!
How to Make Brookies
- Line a 9×13 dish with parchment paper, overlapping the sides.
- Make a box mix brownies and pour it into the prepared dish.
- In a separate bowl combine softened butter, sugar, brown sugar, egg, and vanilla. Mix until fluffy. (If you are using pre-made cookie dough, skip to step 6)
- In another bowl whisk together flour, baking soda, and salt.
- Add dry ingredients to wet ingredients. Add chocolate chips and mix them all together.
- Drop spoonfuls of cookie dough on top of brownie mix.
- Bake at 350 degrees for 30-35 minutes.
- Let cool in the pan for 15-20 minutes.
Tips for Making Brookies
Tip 1: Depending on how hot your oven runs, you may need to cook this recipe for as long as 40 minutes. Unfortunately, you cannot rely on the toothpick test to tell you when the brookies are done because the brownies stay fudgy. Look for the cookies to get golden brown on top and check the edges of the brownies.
Tip 2: For extra chocolate, sprinkle ¼ cup of semi-sweet chocolate chips on the top of the brownies when they are done cooking. They will melt down a bit into the brownies while they cool.
How to Store Brookies
Brookies should be stored in an airtight container. They can be left on the countertop at room temperature, or you can place them in the fridge. They can also be frozen for up to 3 months.

Ingredients

- 1 stick salted butter softened

- ⅓ cup light brown sugar
- 1 egg

- 2 tbsp all purpose flour

- ¼ tsp salt
- 1 ¼ cup semi-sweet chocolate chips
Instructions
- Line a 9×13 baking dish with parchment paper with overlapping sides so you can easily remove the brookes from the pan and cut into squares.
- Make box mix brownies per package directions. Pour into the 9×13 baking dish and set aside.
- In a separate bowl add softened butter, sugar, brown sugar, egg, and vanilla extract. Using a hand mixer, beat until mixture is light and fluffy. Set aside.
- In a separate bowl add flour, baking soda, and salt. Use a whisk to combine.
- Add dry mixture to wet ingredients. Use a large spoon to combine. Add chocolate chips and mix together.
- Drop spoonfuls of cookie dough over the top of the wet brownie mix.
- Bake in the oven at 350 degrees F for 30-35 minutes, or until a toothpick in the center of the brookies comes out clean.
- Let cool in the pan 15-20 minutes before serving.
