For this particular recipe, yes you do! But, you will be so happy you did. The heavy bottom of the cast iron pan brings heat to the center of the bread, helping it cook evenly and creating a moist, dense, delicious bread. It is so good.

How to Make This Cast Iron Banana Bread Recipe
This recipe is so easy to put together, the prep takes about 10 minutes to mix up all the ingredients. Then, it’s as simple as popping the skillet into the oven and letting it do it’s thing!
Mix butter and sugar until fluffy, then add in eggs one at a time.
Add in bananas and vanilla. Combine flour, soda, and salt.
Alternate adding dry mixture and buttermilk to the cream mixture.
Fold in the chocolate chips.
Melt butter in a cast iron skillet and add the bread batter.
Cook for 40 minutes at 350 degrees.
FOR THE CARAMEL SAUCE: Combine butter, sugar, and heavy cream in a saucepan and bring to a boil for one minute. Remove from heat and drizzle over baked bread.
Variations / Options / Add-ins
- PECANS: If you’re not a fan of pecans you can leave them out or replace them with a different nut such as crushed walnuts or almonds.
- CHOCOLATE CHIPS: You can use any flavor of chocolate chips. White chocolate, dark chocolate, butterscotch, or milk chocolate chips would be delicious.
- ICE CREAM: To make this dish into a dessert, try serving it warm with vanilla ice cream and then adding the caramel drizzle over the top! It’s so delicious this way.
Tips
- When baking, place a large round pizza pan or baking sheet underneath your skillet. That way it will catch the overflow if your butter cooks over.
- When making the caramel sauce, keep a close eye on the saucepan. It can burn really quickly if left unattended.

This banana bread can be served a number of ways. For one, it can be served as is for a delicious breakfast option.
However, if you want to jazz it up and serve it as a dessert, you can add my homemade caramel sauce and top it with this easy No Churn Vanilla Ice Cream. It is so delicious this way!
How to Store Leftover Skillet Banana Bread
Store leftover bread in a Ziploc bag or container with a sealed cover on the countertop at room temperature for up to 4 days. You do not want to store leftovers in the fridge. It can cause the bread to dry out prematurely.
Cooled banana bread can also be frozen for 2-3 months. Wrap tightly in plastic and place in a freezer bag before placing it in the freezer.

Cast Iron Banana Bread
Ingredients
Bread
- ¾ cup butter
- 2 tbsp butter (for buttering the pan)
- 1½ cups sugar
- 2 large eggs
- 4 bananas
- 1 tsp vanilla
- 2 cups sifted all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- ½ cup buttermilk
- 1 cup chopped pecans
- 2 cups chocolate chips
Caramel Sauce
- ¾ cup butter
- 1½ cups brown sugar
- ¾ cup heavy whipping cream
- 1 tsp pure vanilla
Instructions
Bread
- With an electric mix, cream 3/4 cup butter and sugar until fluffy.
- Add the eggs one at a time, beating after each egg. Mix in the bananas and the vanilla.
- In a separate bowl, combine the flour, soda, and salt. Use a whisk to blend well.
- Alternate the flour mixture and the buttermilk in the cream mixture
- Fold in the chocolate chips and pecans.
- Melt 1/4 cup butter in a 10 inch cast iron skillet. Add the banana bread batter.
- Cook 350 degrees for 40 minutes or until testing the center with a toothpick comes out clean.
Caramel Sauce
- Add the butter, sugar, and heavy cream to a medium saucepan.
- Bring to a boil and boil for one minute.
- Remove from the heat and spoon warm glaze over banana bread.
