Chocolate Cheesecake Stuffed Strawberries
Chocolate-covered strawberries are one of my all-time favorite desserts! I decided to try something new this time though. I combined my other favorite dessert, cheesecake with the chocolate strawberries!
Merging these two desserts together gave us the delicious treat of a cheesecake stuffed strawberry!
I first saw the idea of a strawberry stuffed with cheesecake from Dessert Now, Dinner Later, but took it to the next level with a chocolate cheesecake filling and I am hooked!

Ingredients / Shopping List
- 2 pints strawberries, tops off and hulled/cored
- 8 ounces cream cheese, softened
- ½ cup chocolate syrup (see notes about syrup)
- ¼ cup powdered sugar
- 2 Tablespoons unsweetened cocoa powder
- ½ teaspoon vanilla extract
- 1 cup whipped topping
- Optional garnishes: mini chocolate chips, chocolate sprinkles

How to Make Cheesecake Stuffed Strawberries
This recipe will comes together in a few easy steps!
Hollow out each strawberry. (slice off the bottom of each so the strawberry can stand up.
CHEESECAKE FILLING: Mix together the cream cheese, chocolate syrup, powdered sugar, cocoa powder and vanilla. Mix it until it has no lumps.
PRO-TIP: Do not put the cream cheese in the microwave to soften. This could make the cheesecake runny. Also, some chocolate syrups are more liquidy than others. I used a relatively thicker one (the Ghirardelli brand). If you are using a very liquidy syrup, then you may want to decrease the amount in half, or start with half and add it to get to the consistency we would like.
Mix in the whipped topping and beat until mixture is light and fluffy.
Place into a piping bag (PRO-TIP: We used a star tip) and pip into each strawberry.
Top with mini chocolate chips or chocolate sprinkles (this is optional…but why not!!)
Frequently Asked Questions & Tips
So it could be 1 of 2 things (or both): If you overly softened the cream cheese, which can happen by trying to speed up the process and putting it in the microwave, your cheesecake can get runny.
Also if you used a very runny chocolate syrup. Some chocolate syrups are more liquid than others. I used a relatively thicker one (the Ghirardelli brand). If you are using a very liquid syrup, then you may want to decrease the amount in half, or start with half and add it to get to the consistency we are looking for.
To store, place your strawberries in a container with enough height so that the frosting doesn’t reach the top.
They are best on the same day, but will still be good for another day or so.
You can also freeze these by individually wrapping them in foil or plastic wrap for a few weeks for a yummy frozen treat.
Your stuffed chocolate cheesecake strawberries are best when prepared and eaten on the same day. However, the cream cheese mixture can be made the day before you need it.
Refrigerate the mixture and assemble the strawberries and cream cheese mixture when you plan to eat it. I recommend whipping the mixture before assembly to use it for the fluffiest texture.

Chocolate Cheesecake Stuffed Strawberries
Ingredients
- 2 pints strawberries tops off and hulled/cored
- 8 ounces cream cheese softened
- ½ cup chocolate syrup cold
- ¼ cup powdered sugar
- 2 Tablespoons unsweetened cocoa powder
- ½ teaspoon vanilla extract
- 1 cup whipped topping
- Optional garnishes: mini chocolate chips chocolate sprinkles
Instructions
- Prepare the strawberries by washing them and removing the stem. Use a strawberry corer or knife to hollow out each strawberry.
- Cut off a small slice of the bottom of each strawberry to create a flat surface for the strawberry to stand up on. Set aside for now.
- Using a mixer on medium high speed, whip the cream cheese, chocolate syrup, powdered sugar, unsweetened cocoa powder, and vanilla until completely smooth with no lumps.
- Mix in whipped topping and beat until fully incorporated and the mixture is light and fluffy.
- Remove the filling from the mixer and place into a piping bag with a star tip.
- Pipe the filling into each strawberry.
- Top off with optional mini chocolate chips or chocolate sprinkles.
- Serve immediately or refrigerate the strawberries until ready to serve.
