You all know me…. I like easy recipes. Well, this one takes the cake… or the cookie (sorry, couldn’t resist!). Reese’s Chocolate Chip Cookie Bites – OMG you seriously only need TWO items and they take 10 minutes start to finish – I kid you not!!
Reese’s Peanut Butter Chocolate Chip Cookie Bites

It never fails, my kids tell me minutes before they are having a group of kids come over or that they need something for their bake sale at 8 PM the night before!
So, what do you do? Well, I have a couple of tricks up my sleeve for exactly this occasion.
One of my go-to cookie recipes, when I am in a pinch, is our 3-ingredient cake mix cookies! These will literally be ready in under 15 minutes!

That’s right – we have all had dessert emergencies, but if you keep these two items with you at all times, you will always be prepared for that dreaded occasion.
How did I learn about this “always be prepared for dessert” hack?
So the other night we went out to dinner with our friends, Danny & Sherrie. We decided to go back to their house for dessert – Sherrie said she could whip something up.
We told her we didn’t want her to go through the trouble, we could just grab something on the way – she swore to us it really wasn’t any trouble.
So when Sherrie pulled these Reese’s Chocolate Chip Cookie Bites out of the oven I begged her for the recipe!
When she told me the recipe I couldn’t believe it -not to mention my recent obsession with bite-sized anything!!! (When they are bite-sized the calories don’t actually count – true story!!)
I get asked all the time what kind of mini muffin pan I use because my cups pop out so easily. I live for anything silicon and this is the muffin pan I use!

Reese’s Chocolate Chip Cookie Bites
Ingredients
- 12 Refrigerated chocolate chip cookie dough balls about 1-2 tablespoons of dough
- 12 Bite sized Reese’s Peanut Butter Cups
Instructions
- Grease a mini muffin pan
- Place a spoonful of the cookie dough in the mini muffin pan
- Place in oven and cook about 10 – 12 minutes (follow whatever the instructions on the package tell you)
- As soon as you pull them out, place one Reese’s Peanut Butter Cup in the middle of the cookie.
- Let cool for a few minutes (or don’t if you are like me and can’t wait)

This aren’t bite sized, but it is SUPER EASY and will please a crowd! My family just loves this Ice Cream Sandwich Cake – yup, you heard me right. A cake made out of Ice Cream Sandwiches.

Iโve made these many times using various fillings and they always come out easily from my metal non stick mini muffin pan as long as I grease it and wait at least 5 minutes for them to cool before taking them out of pan. Made the mistake the first time making them not doing that and they got stuck. The secret is in the waiting. They are delicious!
Such an easy dessert! I always keep the ingredients on hand in case of a dessert emergency. Thank you for your awesome tips.
Looked so good and so simple, but even with a well-greased pan, it was impossible to get these out of the muffin tins. Out of two dozen baked, six came out the way they were supposed to. I might try to make some kind of trifle with the remains of the others.
I canโt believe Iโm saying this, but the cookies we were able to eat were almost overwhelmingly chocolate. Very disappointed.
Oh man! Sorry you had so much trouble with these! I make them all of the time and never have these issues. I do use a silicone baking muffin pan – that could make a difference.
Love this recipe! Did it with my 3 year old granddaughter – she nailed buttering the muffin tin, is an expert playdough roller so made the cookies perfectly round! The secret to getting them easily out of the tin is to wait 5″. Yummy! Fun!

looks good but do I indent the cookie dough balls before I cook or will the pb cups go into the cooked dough make it surrounded ?

Mine didnโt come out of the muffin tin nicely. I was making them for a baby shower today. Now Iโm not sure what to do. The mom loves peanut butter chocolate chip; thought this would be perfect. So disappointed.
Mine got stuck too. So disappointed. This was all my husband wanted for Christmas cookies this year and these are super frustrating. Argh! Totally screwed my baking process lan today
I put them in mini muffin paper cups instead of greasing the muffin pan. This way I can use festive paper cups.
