This No-Bake Cookie Dough Truffles recipe quickly and easily combines everyday ingredients to form an egg-free, creamy cookie dough that’s studded with chocolate chips, rolled into balls, and then coated in chocolate.

While I’ve created plenty of truffle recipes (Strawberry Shortcake Truffles, Lemon Truffles, Peanut Butter Truffles, Peppermint Oreo Truffles, and plenty more) and batches of bite-sized balls (Birthday Cake Oreo Balls, Pecan Pie Balls, Peanut Butter & Jelly Balls), my list was lacking a raw cookie dough recipe.

With a few minor tweaks and revisions to my Edible Cookie Dough, Cookie Dough Bars, and Chocolate Chip Cookie Dough Dip recipes, I have created another version of raw cookie dough in the form of these no-bake balls.

I make my cookie dough edible by eliminating the egg (I use milk in its place to give the dough the added moisture it needs) AND heat-treating the flour (eggs and untreated flour have a high likelihood of containing contaminants like Salmonella and E. coli.), so these truffles are totally safe to eat.

Don’t forget, if you don’t feel like forming them into balls and waiting for the chocolate coating to chill, you can always eat the dough by the spoonful!

  • ½ cup butter softened
  • ½ cup brown sugar
  • 3 tbsp sugar
  • ¼ tsp salt
  • 1 tbsp milk
  • 1 tsp vanilla
  • 1 cup flour
  • 2 cups milk chocolate chips divided
  • 1½ cups white chocolate chips
  • Coconut oil (if needed)

These egg-free No-Bake Cookie Dough Truffles are the perfect bite-sized treat and completely safe to eat! In mere minutes, you can easily combine your ingredients to create the dough, then roll ’em, dip ’em, and decorate! They’re delicious!

  1. To heat-treat your flour, spread it in a thin layer on a baking sheet and bake at 350 degrees Farenheit for 5 minutes.
    Pro Tip: Make sure your flour is completely cool before incorporating it into the cookie dough.
  2. Cream together the butter, brown sugar, sugar, and salt and beat until fluffy.
  3. Mix in the milk and vanilla.
  4. Incorporate the heat-treated flour until mixture is uniform.
    Pro Tip: Your dough should form a ball.
  5. Stir 1/2 cup milk chocolate chips into the cookie dough.

  6. Scoop the dough with a 1-inch cookie scoop, roll into balls, and place each on the lined baking sheet.
  7. Freeze the truffles for 1 hour.

  8. Microwave the white chocolate chips in 30-second intervals, mixing until melted and smooth.

  9. Using two forks, dip half of the truffles completely in the melted white chocolate, allowing the excess to run off, and place them back on the parchment paper.

  10. Melt the milk chocolate chips and repeat for the other half of the truffles.
  11. If desired, use a spoon to drizzle the opposite colored chocolate over the truffles for decoration.
    Pro Tip: If melted chocolate is too thick to drizzle, add a small amount of coconut oil to thin it.

  12. Chill the truffles until bark is hardened and serve.

Tips

  • Since these cookie dough truffles do not contain any leavening ingredients, it is not recommended to bake the dough into cookies. 
  • You can add a bit more flour if the dough is too soft or sticky, or add more milk if the dough is too stiff.
  • To make this even faster, you can bake the flour ahead of time. Then when you are ready to make your truffles, just combine the ingredients.
