My kids always love our taco casserole, but sometimes we like to change it up and add a little crunch to it! While I don’t usually opt for chips for dinner, this casserole is a winner! It is easy to make and I can almost guarantee there will be no one complaining when you serve it up! They just may be complaining that there are no leftovers!

Dorito Taco Casserole Ingredients
- 1 pound lean ground beef
- Half of a yellow onion, diced
- 1 teaspoon minced garlic
- 1 packet taco seasoning
- 12-ounce bag frozen corn
- 14.5 ounce can petite diced tomatoes with green chilies, NOT drained
- 1 cup sour cream
- 2 cups finely crushed Doritos
- 1 cup loosely crushed Doritos
- 3 cups Mexican blend shredded cheese
- (I added one cup black beans)- optional
- Sliced green onions, diced tomatoes, shredded lettuce, avocado, sour cream for garnish (optional)
Dorito Casserole Substitutions
- MEAT: While we prefer lean ground beef, we have made this casserole with ground turkey and ground chicken, as well! Whichever you choose, the flavor is amazing!
- BEANS: We love to add beans to the mix as well! Black beans, pinto beans and even refried beans are delicious!
- Veggies: Don’t be afraid to add in some vegetables! Green peppers, red peppers or even some jalapenos if you want to turn up the heat a little bit!
- Doritos: We used Nacho flavor Doritos, but I have been known to change it up with some Cool Ranch Doritos and Sweet Chili Doritos (my favorite flavor).

How to make this Dorito Casserole Recipe
- CRUSHING THE CHIPS: crush the tortilla chips, set them aside. Two cups should be crushed fine, more like bread crumbs and one cup should be larger chunks, to be spread on top at the end. (I put them in a Ziploc gallon bag and smooshed with my hands.)
- COOK: Beef and onions in a skillet at medium heat. Add garlic and cook for 1 minute. Add frozen corn, taco seasoning, can of diced tomatoes and green chilies, and 2 cups of finely crushed chips. (this is where you would add the optional black beans too!) seasoning.
- STIR: Stir in the sour cream and 2 cups of cheese.
- BAKE: Spread the meat mixture into greased 9×13 casserole dish and bake 5 minutes at 350 degrees just to get it all warmed throughout.
TIP: Be sure to coat the bottom as well as the sides of the baking dish with cooking spray before adding the mixture. - ADD: One cup of cheese on top and one cup of crushed Doritos and bake another 5 minutes until cheese is totally melted. Enjoy with your favorite toppings!

Ohhhh! Another thing that I love about this recipe is that I can make it during the day, throw it in the fridge, and then throw it in the oven right before I am ready to serve dinner!
Just wait to add the final layer of Doritos and cheese until you are ready to bake.
Can you freeze this casserole?
You can freeze this before or after baking for up to 3 months.
Doritos Casserole Storage
Store leftover Doritos casserole, after cooking completely, in an airtight container and refrigerate for up to 3 days. Reheat in the oven.

Instructions
- Preheat oven to 350 degrees.
- Spray 9×13 dish with nonstick spray.
- Gently crush the chips, set aside. Two cups should be crushed fine, more like bread crumbs and one cup should be larger chunks, to be spread on top at the end. (I put them in a Ziploc gallon bag and smooshed with my hands.)
- In a large skillet cook the ground beef and onions. Drain any extra grease.
- Add the garlic and cook for one minute.
- Add the frozen corn, taco seasoning, tomatoes with chiles, and two cups of finely crushed chips. (I added black beans here, too)
- Remove from heat. Stir in the sour cream two cups of cheese.
- Pour into greased casserole dish and place in oven. Bake 5 minutes, until warmed through.
- Add one cup of cheese on top, then one cup of loosely crushed Doritos and bake another five minutes until cheese is melted.
- Remove from oven and serve.

The only change I would make would be to add 1 can of sliced black olives.
add tablespoon sour cream and tablespoon of salsa after serving portion on plate.

*I substituted the sour cream with a 1/2 tsp lemon juice added to 1/2 cup whipping cream. The hint of lemon brings out the spices of the taco seasoning.

I had crushed Doritos in freezer to try this dish. Fiancée doesn’t like onions or tomatoes so I use onion powder and pulse Rotel in food processor. I also use hot chili beans and a can of diced jalapenos. The toppings are hot sauce for him and smashed avocado/sour cream for me. A delicious dish to prepare again.
I worked in a prison for years and the inmates would make this in a garage bag, mixed it all up and would cook over a radiator. I tried it and it was great. They called it a “Break”
Made this just tonight. My somewhat picky son gave me a thumbs up and said it was a keeper. I would’ve added the beans but I know he doesn’t like them. It was super easy and we will make it again for sure. Made enough to share with my neighbor.

I doubled the recipe and it’s in the oven now. I cooked it for 5 minutes but I feel it needs more time. I put it in for another 5 minutes. Not sure if I should go even longer.
