Simply layer store-bought or homemade ice cream sandwiches with your favorite toppings – hot fudge, Oreos, whipped cream – and any fun extras you desire. Freeze, slice, and serve – it’s that easy! This crowd-pleasing recipe is guaranteed to become your new summertime favorite too.

Ice Cream Sandwich Cake Recipe

Our easy No Bake Ice Cream Sandwich Cake recipe is more of an assembly process rather than a strict set of rules. We have been making this cake since Pinterest started. In fact, our recipe was one of the original viral pins that helped make this recipe famous!

Simply spread, sprinkle, or drizzle your favorite candy, cookie crumbles, sauces, or syrups between your sandwiches, garnish the top with more goodies, and set the sandwich in the freezer.

If you are not a baker, this is the recipe for you! I apologize ahead of time that this will likely become your most requested recipe, so stock up on ice cream sandwiches!

Ingredients Notes

  • Ice cream sandwiches: There’s no need to limit yourself to the classic vanilla ice cream sandwiches. Feel free to swap the sandwich layers with different flavors, such as s’mores, mint, red velvet, cookies n cream, birthday cake, or chocolate ice cream sandwiches.
  • Oreos: I made my cake with crushed Oreo cookies but you can use your favorite cookie crumbles to cover your cake. I don’t recommend the double stuff Oreo’s for this recipe, it is more about the cookies than the cream.
  • Hot fudge topping: Choose any kind of fudge sauce, chocolate sauce or caramel sauce that you love.
  • Frozen whipped topping, Cool Whip, or whipped cream

How to Make Ice Cream Sandwich Cake

  1. Assemble: Place a layer of ice cream sandwiches on the bottom of the baking dish. Spread hot fudge over the ice cream sandwiches and top with Cool Whip. Repeat with another layer of sandwiches, hot fudge and Cool Whip.
  2. Decorate The Dessert: Sprinkle with crushed Oreos and drizzle with hot fudge. 
  3. Freeze: Freeze for at least 4 hours.
  4. Serve: Slice, serve, and enjoy!

Tips & Variations

  • Use A Deep Dish: This is a tall dessert! Be sure to use a 9×13 baking dish for this recipe. Your cake should fill right up to the brim of the dish. 
  • Work Quickly To Unwrap: Be sure not to leave the ice cream sandwiches out too long while preparing the cake. Otherwise they can become too melted to use. 
  • Top Your Treat: Now this is where the fun begins! I sprinkled crushed Oreo cookies over the top of my cake, but there are so many other treats that you can crumble, drizzle, or spread. Some of my favorite toppings include Heath toffee bits, chopped candy bars, waffle cones, pieces of peanut butter cups, nuts, chocolate chips, M&M’s, magic shell topping, and of course, sprinkles!
  • Create Another Cake: This dessert is so easy, you may as well make multiple! My M&M Ice Cream Sandwich Cake, S’mores Ice Cream Sandwich Cake, and Banana Split Ice Cream Sandwich Cake are some of my family’s favorites.
  • Customize Your Cake: Garnish with different colored sprinkles to match the holiday or celebration. Use red, white and blue sprinkles for Memorial Day, Labor Day, or July 4th, pick rainbow sprinkles for a birthday party, or grab green and red colors for Christmas. 

Serving Instructions

Patience is key to a perfect ice cream cake! To ensure smooth, clean slices, resist the urge to dig right in. Let the cake soften slightly at room temperature for 20 minutes before serving. This will make slicing a breeze. For the cleanest cuts, run a sharp knife under hot water in between slices, wiping it clean each time.

Proper Storage

  • To Store: When wrapped tightly with aluminum foil or plastic wrap, this easy ice cream cake will keep in the freezer for up to 1 week.
  • Make Ahead: This ice cream cake can be made 3-4 days in advance. Simply prepare and pull it out of the freezer when you’re ready to serve. I suggest letting it sit for just a few minutes to soften before slicing.

No Bake Ice Cream Sandwich Cake

Make this Ice Cream Sandwich Cake in under 10 minutes! Just 4 ingredients – ice cream sandwiches, Cool Whip, hot fudge, and Oreos! A delicious layered dessert for warm weather days.

Ingredients
  

  • 21 ice cream sandwiches
  • 18 Oreos  (or similar, crushed)
  • 11.75 ounce hot fudge
  • 16 ounce tub Cool Whip (thawed and divided)

Instructions
 

  • Arrange a layer of ice cream sandwiches on the bottom of a 9×13 inch pan.
  • Spread ⅓ of the hot fudge over the ice cream sandwiches. Top with half of the Cool Whip.
  • Repeat with another layer of sandwiches, hot fudge and Cool Whip.
  • Sprinkle the crushed Oreos over top and drizzle over the remaining ⅓ of the hot fudge.
  • Freeze for at least 4 hours.
