Root Beer Popsicles Ingredients

  • Root beer: I used A&W but feel free to use your favorite brand.
  • Vanilla ice cream

Substitutions and Additions

  • Cut The Calories: You can substitute sugar-free root beer and sugar-free vanilla ice cream for a low-calorie, low carb option.
  • Create Without Cream: If you want a non-creamy root beer popsicle, omit the ice cream and increase the root beer. You will still need to allow the root beer to flatten for 2 hours in the refrigerator before pouring it into the molds.

How to Make Root Beer Popsicles

  1. Flatten The Fizz: Let the root beer chill, uncovered, in the refrigerator for 2 hours.
Pro Tip: This is to allow the root beer to go “flat”. You want as few bubbles as possible.
  2. Make The Mixture: Allow the ice cream to soften for about 5-8 minutes and then whisk in the flat root beer until smooth.
  3. Pour Into Popsicle Molds: Pour root beer mixture into the popsicle molds, add the sticks, and freeze for at least 4 hours.
  4. Serve: Quickly run the popsicle molds under hot water to release the popsicles. Keep frozen until ready to serve. Enjoy!

No Popsicle Mold? No Problem!

If you don’t have popsicle molds, you can pour the root beer mixture into small paper or plastic cups, a silicone muffin pan, or ice cube trays. I like to let them freeze about an hour before adding the sticks because it allows them to stay in place. Once the sticks are in place, keep the popsicles in the freezer until frozen through.

Tips For Making The Best Root Beer Popsicles

  • If you do not have popsicle molds, you can use ice trays and toothpicks.
  • Make sure you allow the root beer to go “flat”. You want as few bubbles as possible.
  • Let the ice cream sit out for 5 minutes or until it gets soft and slightly melted before placing into popsicle molds. This will make it easier to fill each mold and also allows the A&W Root Beer to mix in a bit to create a creamy popsicle.

How to Store Root Beer Popsicles

  • To Store: You can store any leftover popsicles for up to 3 months.

Frequently Asked Questions

Why do I have to use flat soda?

If you use root beer straight from the bottle and don’t allow time for it to go flat, it will rise to the top of the popsicle mold and get very icy. Allowing the root beer to lose its carbonation will ensure your pops have the perfect texture.

How long does it take for homemade popsicles to freeze?

The length of time it takes for your popsicles to freeze will depend on the mold you use. Most molds that have built in sticks take between 4-5 hours for the mixture to freeze.
