This no-bake Ritz S’mores Cracker Cookie recipe is a simple spin on the traditional fireside treat, easily made as a chocolate-coated cookie without stepping foot near a flame.
Only 4 ingredients are needed to make this easy sandwich snack – Ritz crackers, marshmallow creme, chocolate almond bark, and graham crackers!
s’mores cookies made with Ritz crackers
A S’more Cracker Cookie is a delicious mix of salty, sweet, smooth, and crunchy, made in mere minutes using straight marshmallow fluff for filling between two Ritz crackers, covering it in melted chocolate and then sprinkling graham cracker crumbs on top.
Who knew pairing a salty, buttery cracker with sweet chocolate and marshmallow could create the perfect salted smore cookie?
While Ritz Bits S’mores has been discontinued, and other cracker sandwiches are sold with a cheese or peanut butter stuffing, this original recipe is a different way to dress up a Ritz to make it seem more like a sweet treat.
It couldn’t be any easier to smear some marshmallow creme in between two buttery crackers, then dip the entire sandwich in chocolate to create the best s’more cookie sandwich. (It tastes even better than Ritz cheese crackers and Ritz peanut butter crackers too!)

Tip From Our Recipe Developer
- For this recipe, I highly recommend purchasing Ritz Crackers. They do not break as quickly as the other brands.
- Make sure not to add too much marshmallow crème on the crackers. The crème will spread, and you want to keep them in the center of the cracker to avoid mixing the crème into the melted chocolate almond bark.
- When melting almond bark make sure you go in 30-40 second intervals. You want to make sure you get all the almond bark melted evenly to avoid clumping.
- I recommend placing the chocolate-covered cracker sandwiches on wax paper. It really allows the cracker sandwich to easily pop off after chocolate has hardened.
- Top each s’more sandwich with crumbled graham crackers and marshmallow bits to really bring in the s’more taste in every bite.
Storage
- To Store: These S’more Cracker Sandwiches will stay fresh in an air-tight container for up to 5 days.
