S’more Brownies with Oreo Cookies

Our S’more Brownies with Oreos recipe is the most delicious mashup of my Slutty Brownies merged with my layered S’mores Lush Dessert and my S’mores in the Oven sandwiches. It’s an easy way to combine the nostalgia of an outdoor dessert with the comfort of an indoor indulgence.

Much like campfire classic, these oven-baked s mores brownies have a graham cracker base, with chocolate brownie batter and melted marshmallow in the middle. These brownie bars are made even better because they’re stuffed with Oreo cookies and covered with even more chocolate and toasted marshmallows on top.

When it’s too cold (or hot) outside for open flames, there’s no reason to miss the fireside fun – skip the stick (and the mess) and bake your brownies any time or season.

  • Graham crackers: You can use honey graham crackers or chocolate graham crackers to create the crunchy base.
  • Oreo cookies: I used mini Oreos for this smore brownie recipe. Feel free to use full-size Oreos or leave them out altogether, but that would be just silly!
  • Marshmallows: You can use mini marshmallow, large marshmallows cut in half, or Jet-Puffed S’moreMallows. I fell in love with these flat s’more marshmallows!
  • Brownie mix plus the ingredients called for on the box (water, oil, and egg): You can use your favorite brand of brownie mix or make your own homemade brownie batter from scratch.

How to Make S’more Brownies with Oreos

  1. Make The Brownie Batter: Prepare the brownie mix according to the box directions.
  2. Assemble: Arrange the graham crackers along the bottom of the baking dish. Spread a layer of brownie batter over the graham crackers, cover with a layer of Oreo cookies, and top with marshmallows. Cover the marshmallows with the remaining brownie batter.
  3. Bake: Bake at 325 degrees for 45 minutes.
  4. Broil: Remove the brownies from the oven and place a layer of marshmallows on top. Broil until golden brown.
  5. Cool, Cut, and Serve: Cool completely before cutting. Serve and enjoy!

Serving Suggestions

This s’mores brownie recipe makes the ultimate summer slice! Because it serves 20, it’s perfect for feeding plenty of friends at backyard barbecues, potlucks, and parties. Plus, it’s easily made in a baking pan, so it’s portable.

Serve with a scoop of ice cream, a dollop of whipped cream, or a drizzle of chocolate sauce to make them even more decadent!

Tips & Variations

  • Prepare Your Pan: Make sure you use parchment paper to line your glass baking dish. It makes it so much easier to remove the bars and clean up a breeze.
  • Bake Your Bars: Baking time may vary depending on your oven. Check around 35 minutes to see if yours are done. Personally, I prefer them a little overcooked than undercooked.
  • Don’t Burn When Broiling: Do not take your eyes off of your s mores brownie bars when broiling the top marshmallows. They burn really, really fast! The longest you will need to leave them under the broiler is 2 minutes, but probably less.
  • Cool Before Cutting: To cut your s’more brownies, let them cool completely and spray a knife with cooking spray before cutting.
  • Use Other Oreos: While smores brownie bars are traditionally stuffed with classic or mini Oreos, that doesn’t mean you can’t get creative and give other flavors a try. S’mores, Red Velvet, Golden, or your other favorite flavors should taste great with this recipe.

Proper Storage

  • To Store: Leftovers can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
  • To Freeze: These brownies can be frozen for up to 3 months. I recommend cutting them into squares and placing in a freezer bag or freezer-safe container. Defrost on the countertop when you are ready to serve.

  • Preheat oven to 325 degrees
  • Prepare brownie mix according to the directions on your box
  • Line a 9 x 13 glass baking dish with parchment paper
  • Lay graham crackers all along the bottom of the dish
  • Using a spatula, spread a layer of the brownie mix over the graham crackers – covering as much of the crackers as possible
  • Place a layer of Oreo cookies on top of the brownie layer
  • Layer the marshmallows over the top of the cookies (I used the flat s’more marshmallows – but I cut them each in half so there was a thin layer of marshmallow
  • Use the remaining brownie batter to cover the marshmallows and along the sides of the Oreo cookies – spread it as evenly as possible.
  • Bake for 45 minutes (this may vary depending on your oven – check around 35 minutes to see if they are done. Personally, I prefer them a little overcooked than undercooked).
  • Take out of oven and place a layer of marshmallow on top of the brownies (again, I cut my in half). Place them under the broiler until they start to get golden brown – NOTE: Do not take your eyes off of them, they burn really, really fast. The longest you will need to leave them is 2 minutes, but probably less.
  • Let them cool completely before cutting – otherwise you will have a huge mess on your hands! I left mine for about 2 hours before I cut them!

  1. I’ve made these several times and they’ve come out perfectly. They’re a gooey mess-just how brownies should be!

  2. How do you know when they’re done baking? Will a toothpick actually come out clean like with regular brownies?

    1. Unfortunately, not really. Because the Oreo’s get melty and never really “cook firmly”. Mine were around the same time as it stated on the box of brownie mix. I would err on the side of overcooking a bit, but that is just me!

  4. These did not come out well at all. I’m a seasoned baker and these were burnt on top (not talking about the marshmallows, i added them last) and not done in the middle. Its too thick. I followed directions and my oven is fine. I usually don’t leave reviews but I wish I would’ve read the others before I made this.

  6. I just made these last night. How did you store them? I made them in advance for a party this weekend. Can I just cover and leave out? I’m afraid if I refrigerate or freeze the graham cracker will get mushy or the marshmallows won’t be the same.

  7. These were horrible, we double and triple check the recipe, and the brownie once too. The marshmallows were burnt so bad you couldn’t even eat the top, the brownie battery didn’t even finish cooking. So I don’t know where you got that picture, or you write down the direction incorrectly. So disappointed.

    1. So sorry they didn’t work out for you…. the recipes is correct and they were delicious here! As I mentioned, the top marshmallows only go on at the very end and you just want them browned. Different ovens cook differently, so 2 minutes may be too long for some, that is why you need to watch them and take them out as soon as they begin to brown. However, I guarantee the picture is actually mine and they are a family favorite in my house ๐Ÿ™‚

    1. Hi Candy – You bake the layers with the final layer being the brownies – when those are done, you take them out of the oven and put an additional marshmallow layer on top and broil that for about 1-2 minutes (until golden brown). Hope that makes more sense!
