One of my best cookie hacks is using a box of cake mix as the base! I have made so many delicious cookie recipes this way. My 3-Ingredient Cake Mix Cookies and Lemon Cake Mix Cookies are two of my easy go-to’s, but today, I’m bringing you my favorite, Strawberry Cake Mix cookies recipe!

These cake mix cookies are so yummy. The combination of strawberry flavor and white chocolate chips is undeniable, and the use of cake mix as the base creates the chewiest, gooey cookies! You are going to love how easy these are to make and how delicious they are to enjoy.

  • 15.25 ounces box strawberry cake mix
  • 2 large eggs
  • ½ cup salted butter softened
  • 1½ tbsp strawberry syrup
  • 3 tbsp lemon juice (about one lemon)
  • ½ tsp baking soda
  • 1 cup white chocolate chips

How to Make This Strawberry Cake Mix Cookies Recipe

This recipe is super quick and can be put together in just 4 easy steps. These cookies will be ready in under 20 minutes from start to finish. They are the perfect last minute dessert dish to pass or treat for an event!

Bake for 8-10 minutes.
Pro-tip: You want the cookies to just be set before taking them out of the oven. If the edges are golden brown, they have cooked for too long. You shouldn’t see too much browning along the edges (a light brown is okay).

Variations / Options / Add-ins

  • SALTED BUTTER: You can also use unsalted butter here, but I prefer the extra bit of salt to cut through the sweetness. 
  • STRAWBERRY SYRUP: This is a fun addition that increases the flavor, but if you find the cookie to be too sweet, you can remove this. 
  • LEMON JUICE: Lime juice is a great replacement here. Either fresh juice or juice from concentrate works fine. 
  • WHITE CHOCOLATE CHIPS: If you want to replace this with other chocolate chips, you certainly can do so. I love adding dark chocolate chips to counteract the sweetness of the cookies.

You can store these cookies in an airtight container at room temperature for up to 5 days. Put these in the freezer in order to keep them for a few months. These are very soft, crumbly cookies, so be very careful when storing them, as they will easily break. 

What do I do if my cookies turn out too flat?

Sometimes if the butter melts or gets too soft while you are preparing the cookie dough, your cookie will flatten too much as it bakes. Make sure that the butter you use is softened to room temperature, but has not started to melt. The best method I have found is to leave the butter on the counter for about 30 minutes to 1 hour before making the cookies. I would also use eggs and syrup that were in the refrigerator to keep the dough cooler. Chilling the dough can also help, but the texture of the cookie turns out a little differently. The best cookies are those that are immediately baked right after the dough is prepared.

Ingredients
  

  • 1 15.25- ounce box strawberry cake mix
  • 2 large eggs
  • ½ cup salted butter softened
  • tbsp strawberry syrup
  • 3 tbsp lemon juice (about one lemon)
  • ½ tsp baking soda
  • 1 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit and prepare a cookie sheet by lining it with parchment paper.
  • In a large bowl, mix the strawberry cake mix, large eggs, salted butter, strawberry syrup, lemon juice, and baking soda until completely combined.
  • Fold in the white chocolate chips.
  • Scoop dough with a small 2 inch cookie scoop onto the prepared sheet pan, leaving 2 inches between cookies.
  • Bake in the oven for 8-10 minutes or until the edges have set and let cool for 4 minutes before plating and serving.

    They’re good but could be better. I mean I knew reading the recipe it wasn’t going to be some fantastic cookie but rather a very easy recipe that will satisfy the craving for something strawberry

    I substituted 2 medium chopped fresh strawberries for the syrup. These are pretty and slightly puffy cookies. We prefer them a bit more brown on the edges

  3. Is there a replacement for lemon juice? Any kind of citrus is a trigger for migraines so I canโ€™t have any.
