Either rice your head of cauliflower or defrost your frozen riced cauliflower

Saute onions & frozen vegetables and cook until soft. Add in the cauliflower rice and cook until heated. Add the soy sauce and mix well.

Add eggs and scramble. Break the scrambled eggs into small pieces and mix the rice mixture. Add additional soy sauce and seasoning to taste.
