Apple Cinnamon Roll Casserole
Our Apple Pie Cinnamon Roll Breakfast Casserole recipe is just as quick and easy to make as my Cinnamon Roll Casserole (aka French Toast Bake), but this version combines the cinnamon roll pieces with apple pie filling so it’s filled with fall flavor.
It takes 10 minutes to prepare the cinnamon roll apple mixture, then bake it in the oven until golden brown; dress it up with a drizzle of icing and sweet caramel syrup and bite into the best cinnamon roll breakfast casserole.
This breakfast bake is a delicious twist on the traditional apple pie and a fun way to turn a can of cinnamon roll dough into a brunch (or dessert).
I love making a breakfast casserole that’s big enough to feed a crowd; it’s the perfect sweet treat for family gatherings or when hosting brunch for the holidays.

Ingredients
- Dark brown sugar: You can substitute light brown sugar or granulated white sugar if you prefer. It may make the final result sweeter if you do so.
- Cinnamon
- Refrigerated cinnamon rolls with icing (like Pillsbury)
- Salted butter: You can use unsalted butter but I recommend adding a pinch of salt to the sugar-cinnamon mixture for balance.
- Apple pie filling: If you have a homemade apple pie filling recipe that you love, feel free to use that instead.
- Caramel syrup
Substitutions and Additions
- Use Your Favorite Fruit Fillings: I used apple pie filling for this recipe because the flavor pair perfectly with brown sugar and cinnamon. However, you can use other fruit fillings for your breakfast bake. Blueberry, cherry, strawberry, and peach are all great filling swaps.
- Create crunch: You can sprinkle some pecans or walnuts on top of your casserole to create texture and crunch.
- Tasty Toppings: Top your apple cinnamon rolls with whipped cream, a scoop of vanilla ice cream, or even add some sprinkles. This is a fun way to serve a birthday breakfast bake!
Recommended Tools

How to Make Apple Pie Cinnamon Roll Breakfast Bake
- Make The Cinnamon Sugar Mixture: Whisk together the dark brown sugar and cinnamon
- Cut and Coat The Cinnamon Rolls: Cut each can of cinnamon rolls into fourths and toss them in the cinnamon sugar mixture. Spread the coated cinnamon roll pieces into the casserole pan and pour the melted butter on top.
Pro Tip: Make sure to pour the butter around the edges so that they don’t dry out. - Form The Filling: Mix together the apple pie filling and the caramel syrup. Then cut the apple slices into bite size pieces.
- Pour Into The Pan: Pour the apple pie mixture over the cinnamon rolls in a single layer.
Pro Tip: Not all the cinnamon rolls will be covered but you want to have apples scattered evenly all over the top. - Bake: Bake at 350 degrees Fahrenheit for 35-40 minutes or until the cinnamon rolls are firm to the touch and beginning to turn golden brown.
- Serve: Cool for 10 minutes before drizzling the casserole icing caramel syrup. Serve warm and enjoy!
Tip From Our Recipe Developer
- Do not discard the icing packet that comes in the cinnamon roll can. You’ll need it for drizzling! If your can of dough does not come with icing, you can make your own by dissolving powdered sugar in water.
- If storing your casserole in the fridge overnight, be sure to follow any instructions for your bakeware when baking with cold glassware or ceramic dishes so that they do not crack.
Storage
- To Store: Store any leftovers in an airtight container in the refrigerator for 3-5 days.
- To Freeze: Place the leftovers in a freezer-safe container and freeze for 3-4 months.
- To Reheat: Reheat in the microwave or oven until heated through.

luv it
love baking
Iโve made this three times now. And I gotta say itโs better with the generic apple filling also the blueberry filling in generic. Delicious! Also used store brand cinnamon roll dough. It all tasted great but the store brand saved me a ton on this meal. Also for our family- just three of us I decided to just use one tube of cinnamon rolls. It tasted amazing!
plan to make this apple pie dessert fir Thanksgiving. ๐
