Snickerdoodle Cheesecake Bites

Snickerdoodle Golden Oreo Truffles takes minutes to prepare using crushed Golden Oreo cookies combined with cream cheese, cinnamon, and vanilla, then rolling the no-bake batter into balls, and covering them in melted chocolate.

These Snickerdoodle cookie truffles are my family’s favorite finger food, with their soft and creamy filling that’s flavored like a combination of cookie dough and icing.

A white chocolate coating on the outside of an Oreo cheesecake makes these truffles taste like a frosted cookie without all the work.

Snickerdoodle Truffles Ingredients

  • Cream cheese
  • Golden Oreos
  • Ground cinnamon
  • Vanilla extract
  • White almond bark

Substitutions and Additions

  • Tasty Toppings: Feel free to add sprinkles and top each truffle to give it a holiday flair.
  • Choose Your Chocolate: You can use white almond bark, chocolate almond bark, or candy melts to coat these chocolate-covered truffles. I prefer not to use chocolate chips because the chocolate doesn’t turn out as smooth.
  • Customize Your Colors: You can use a variety of colored sprinkles to make Snickerdoodle truffles for any holiday or celebration. Add rainbow sprinkles for a birthday-themed party; red and green sprinkles for Christmas; pink and red sprinkles for Valentine’s Day; pretty pale colors for Easter.

How to Make Snickerdoodle Truffles

  1. Make The Middle Mixture: Crush the Oreos into fine crumbs and combine them with the cream cheese, cinnamon, and vanilla.
  2. Form Truffle Balls: Scoop the mixture into balls, roll them smooth, and place them on a baking sheet. Chill in the freezer until firm. (Image 1)
  3. Melt: Microwave the almond bark in 30-second intervals until smooth and melted.
Pro Tip: Be sure to stir between each heating so the bark doesn’t seize up.
  4. Dip And Decorate: Dip each ball into the white chocolate (Images 2 & 3) and place it back onto the parchment paper. Quickly add sprinkles to the top before the chocolate sets (Image 4).
  5. Serve: Serve and enjoy!

How to Soften Cream Cheese

I recommend you take your cream cheese out of the refrigerator for at least an hour before making your truffle mixture. Allowing it to soften to room temperature makes for the creamiest of fillings.
If you can’t let it soften over time, you can unwrap the package and microwave it on a plate in 15-second intervals, turning often, until soft. Be sure not to overheat it, or it will melt.

Tips for Making Homemade Truffles

  • You can use a cookie scoop to make rolling these easier.
  • You can crush the Oreos by hand using a rolling pin but ensure no large cookie pieces are left.
  • Make sure your cream cheese is softened to room temperature to help avoid cream cheese lumps in the truffle dough.

How to Store Homemade Truffles

  • To Store: Store the truffles in an airtight container in the refrigerator for up to 2 weeks.
  • To Freeze: Freeze your truffles well-wrapped and in a freezer-safe bag or container for 2 months.

Frequently Asked Questions

What is a Snickerdoodle?

A Snickerdoodle is a classic cookie usually made with butter, sugar, and flour. It is then rolled in cinnamon sugar before baking. These Snickerdoodle truffles are filled with the same delicious cookie flavors but formed as no bake balls, so they’re even easier to make.

How to coat truffles in Chocolate?

The best method to coat these truffles in chocolate is to use a fork and gently tap any excess chocolate on the side of the bowl. I like to use a toothpick to remove the excess melted wafer from the bottom of the fork and then gently push the ball onto the baking sheet.

Do truffles need to be refrigerated?

Truffles should be kept in the fridge until you serve them. I think they taste best when cold. However, they can be left at room temperature. According to the FDA, cream cheese can be left out at room temperature for up to 2 hours.

These truffles are dangerously good! I had to give half of them away for fear I was going to eat them all in one sitting. They didn’t last long in my house.
