How to Make Brownie Bites

  1. Make The Chocolate Mixture: Melt the butter, then whisk in the cocoa powder, espresso powder (optional), and brown sugar until smooth and combined. Remove the mixture from the heat and allow it to cool for at least 5 minutes.
  2. Prepare The Brownie Batter: Whisk the egg, egg yolk, and vanilla into the chocolate mixture (Image 1). Slowly mix in the flour and salt, and then fold in the chocolate chips. (Image 2)
  3. Bake The Batter: Scoop the batter into the muffin pan cavities (Image 3) and bake at 325 degrees Fahrenheit for 10-12 minutes until set. Do not overbake! Cool in the pan for 5 minutes. (Image 4)
  4. Serve: Serve warm or cool and garnish with sprinkles or melted chocolate. Enjoy!

Easy Brownie Bites are soft, chewy and filled with rich fudgy flavor. The perfect two bite treat!

Ingredients
  

  • ½ cup (plus 3 tablespoons) unsalted butter softened
  • ½ cup unsweetened cocoa powder
  • ¼ teaspoon espresso powder *optional but adds a deeper flavor
  • ¾ cup brown sugar
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • 1 pinch salt
  • ¾ cup semi-sweet chocolate chips
  • * optional – sprinkles and extra melted chocolate chips for drizzling.

Instructions
 

  • Preheat oven to 325°. Butter a mini muffin pan or prepare with mini cupcake liners and set aside.
  • In a saucepan over medium heat, melt the butter. Next add in the cocoa powder, espresso powder if using and brown sugar. Whisk until smooth and combined.
    ½ cup (plus 3 tablespoons) unsalted butter, ½ cup unsweetened cocoa powder, ¼ teaspoon espresso powder, ¾ cup brown sugar
  • Remove the mixture from the heat and allow it to cool for at least 5 minutes. Whisk in the egg, egg yolk and vanilla.

  • Slowly incorporate the flour and salt with a silicone spatula. Fold in the chocolate chips.
