Bruschetta is an appetizer that I order just about every time I go to an Italian restaurant. Or any restaurant that offers it, for that matter. The flavor combo of olive oil, garlic, fresh tomatoes, basil, and mozzarella cheese simply can’t be beat for me. You get the classic Italian flavors, in a light and refreshing dish.
This is why I just love this Bruschetta Chicken Bake! It makes a great weeknight dinner! It’s ready in less than an hour, including the bake time. It’s also a healthy option and low carb. And if you’re not concerned with the carbs, you can serve this over noodles to make it a yummy pasta dish!

Variations / Options / Add-ins
- CHICKEN: Best to use boneless, skinless chicken breasts for this recipe. If using frozen chicken, make sure to thaw it completely and pat dry before using in the recipe.
- BRUSCHETTA: I used tomato based bruschetta, which I think works best in this dish. The brand I used is DeLallo. You can use fresh-made tomato bruschetta, which would allow you to better control the ingredients and give it a fresher flavor profile.
- BALSAMIC GLAZE: You can use a store-bought balsamic glaze or make your own. See instruction in the FAQ for how to make your own homemade balsamic glaze.
- CHEESE: Although mozzarella is the traditional option and melts beautifully over the chicken, you have the flexibility to opt for another cheese. Consider trying provolone or Monterey Jack as alternatives. Additionally, you may choose to sprinkle parmesan cheese on top.
How to Make Bruschetta Chicken Bake Recipe
Any weeknight dinner that only has 5 steps in the instructions is a winner in my book. You won’t believe how quick and easy it is to put together your Bruschetta Chicken Bake!
- Mix together Italian seasoning, garlic powder, salt & pepper.
- Place the chicken into a baking dish and season the chicken breasts with this mixture. Spoon bruschetta over the top of the chicken.
- Bake in the oven at 375 degrees, uncovered, for 20 minutes.
- Take the chicken out of the oven, sprinkle mozzarella on top, and bake for an extra 15 minutes until the chicken is fully cooked, with a meat thermometer registering 165°F in the thickest part of the breast.
- Drizzle with balsamic glaze and sprinkle with fresh basil.
Storage
- To store: Store leftovers in an airtight container in the refrigerator for up to 3 days. This meal will keep in the freezer for 2-3 months.
- To freeze: Allow the leftovers to cool in the refrigerator before transferring them to a freezer-safe container and placing them in the freezer. Thaw in the fridge before reheating.
- To reheat: Reheat by placing in an oven-safe container, such as a casserole dish, covering loosely with tin foil and baking at 350F for about 30 minutes, or until heated through.

- 4 boneless, skinless chicken breasts
- 2 teaspoons Italian seasoning

- 2 cups store bought bruschetta
- 2 cups shredded mozzarella cheese
- Balsamic glaze for garnish

Instructions
- Preheat oven to 375F. Spray a 9×13 baking dish with cooking spray. Set aside.
- In a small bowl mix together the Italian seasoning, garlic powder, salt and pepper. Season the chicken breasts with this mixture.Pro Tip: Make sure that there is enough room in your baking dish so that the chicken doesn’t overlap. - Place the seasoned chicken breasts into the prepared baking dish. Spoon the bruschetta evenly over the top of the chicken.2 cups store bought bruschetta
- Bake uncovered for 20 minutes.
- Remove the chicken from the oven and sprinkle the mozzarella cheese over the top. Return to the oven and bake for an additional 15 minutes, until the chicken is cooked through and a meat thermometer reads 165F.2 cups shredded mozzarella cheese
