Bruschetta Chicken Bake is a healthy Italy-inspired dish is made of chicken breast that’s topped off with flavorful bruschetta, melted mozzarella cheese, balsamic glaze and fresh basil.
Preheat oven to 375F. Spray a 9x13 baking dish with cooking spray. Set aside.
In a small bowl mix together the Italian seasoning, garlic powder, salt and pepper. Season the chicken breasts with this mixture.Pro Tip: Make sure that there is enough room in your baking dish so that the chicken doesn’t overlap. It will take the chicken longer to bake otherwise.
2 teaspoons Italian seasoning, 1 teaspoon garlic powder, 1 teaspoon salt, ½ teaspoon pepper, 4 boneless, skinless chicken breasts
Place the seasoned chicken breasts into the prepared baking dish. Spoon the bruschetta evenly over the top of the chicken.
2 cups store bought bruschetta
Bake uncovered for 20 minutes.
Remove the chicken from the oven and sprinkle the mozzarella cheese over the top. Return to the oven and bake for an additional 15 minutes, until the chicken is cooked through and a meat thermometer reads 165F.

Drizzle with balsamic glaze and sprinkle with fresh chopped basil before serving.

Storage:To store: Store leftovers in an airtight container in the refrigerator for up to 3 days. This meal will keep in the freezer for 2-3 months.To freeze: Allow the leftovers to cool in the refrigerator before transferring them to a freezer-safe container and placing them in the freezer. Thaw in the fridge before reheating.To reheat: Reheat in an oven-safe container, such as a casserole dish, covering loosely with tin foil and baking at 350F for about 30 minutes, or until heated through.
