  3. Bake: Spoon the batter into the mini muffin pan, sprinkle a few chocolate chips on top, and bake at 350 degrees Fahrenheit for 15-18 minutes.
  4. Serve: Cool to room temperature, remove from the tin, serve and enjoy!

Mini banana bread muffins are super moist and are easy to make from scratch with fresh bananas and mini chocolate chips.

Ingredients
  

  • 1 cup sugar
  • ½ cup butter melted
  • 2 eggs
  • 3 bananas very ripe
  • 1 tablespoon lemon juice
  • 2 cups flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • mini chocolate chips

Instructions
 

  • Mix together melted butter and sugar
    1 cup sugar, ½ cup butter
  • Add eggs
    2 eggs
  • Mush bananas and stir them in with the other ingredients
    3 bananas
  • Stir in lemon juice
    1 tablespoon lemon juice
  • Add flour, baking powder and salt
    2 cups flour, 3 teaspoons baking powder, ½ teaspoon salt
  • Stir in mini chocolate chips
    mini chocolate chips
  • Spoon into well greased mini muffin pan. Fill about 3/4 full and sprinkle some mini chocolate chips on top of the muffins
  • Bake at 350 for 15-18 minutes (sides should get golden brown and top should not look moist)
  • Let cool and then pop out!
  • Enjoy!

    1. It really is personal preference. I probably use about 1/2 a bag or so, but mix some in and see how the batter looks to you and add more if you like. You really cannot mess it up!

    Favorite ever! Second time making and Iโ€™ll never use another recipe! I have three kids and 2 would never eat the banana muffins I made in past; Iโ€™m telling you I dipped in sugar, reduced bananas to try and hide flavor, pbutter flourโ€ฆ never would they eat more than one bite. BOTH GOBBLED THESE UP BY YHE HANDFUL! Super simple too!

    Made these for my mom and she absolutely loved them. Will make it again.
    But I did use this to make regular-size muffins and ended up with more than a dozen. I ended up baking them for about 25-30mins.
