- Sugar

Mini Banana Muffins
Ingredients
- 1 cup sugar
- ½ cup butter melted
- 2 eggs
- 3 bananas very ripe
- 1 tablespoon lemon juice
- 2 cups flour
- 3 teaspoons baking powder
- ½ teaspoon salt
- mini chocolate chips
Instructions
- Mix together melted butter and sugar1 cup sugar, ½ cup butter

- Mush bananas and stir them in with the other ingredients3 bananas
- Stir in lemon juice1 tablespoon lemon juice
- Add flour, baking powder and salt2 cups flour, 3 teaspoons baking powder, ½ teaspoon salt
- Stir in mini chocolate chipsmini chocolate chips
- Spoon into well greased mini muffin pan. Fill about 3/4 full and sprinkle some mini chocolate chips on top of the muffins
- Bake at 350 for 15-18 minutes (sides should get golden brown and top should not look moist)
- Let cool and then pop out!
- Enjoy!

How much mini chocolate chips would you recommend?
It really is personal preference. I probably use about 1/2 a bag or so, but mix some in and see how the batter looks to you and add more if you like. You really cannot mess it up!

Favorite ever! Second time making and Iโll never use another recipe! I have three kids and 2 would never eat the banana muffins I made in past; Iโm telling you I dipped in sugar, reduced bananas to try and hide flavor, pbutter flourโฆ never would they eat more than one bite. BOTH GOBBLED THESE UP BY YHE HANDFUL! Super simple too!

But I did use this to make regular-size muffins and ended up with more than a dozen. I ended up baking them for about 25-30mins.

I make this in to a loaf all of the time! Makes a perfect sized loaf and you can for sure double the recipe to make 2 loaves!
