These cookies are soft and light, and even though they may come from a cake mix, they are not cakey at all. They are moist and pillowy in the center, crispy around the edges, and bursting with fun colorful sprinkles.

I love how these cookies retain their soft-baked consistency with their pops of confetti colors that makes them deliciously fun to eat. From one cookie critic to another, this recipe has a more balanced flavor than your typical cake mix cookie. Because all you need is a box, a few pantry staples, and 30 minutes later, an irresistible cake batter cookie is born!

  • Sprinkles: I used rainbow jimmies sprinkles in this recipe, but feel free to use any sprinkles you prefer.
  • Baking soda
  • Sour cream
  • Eggs
  • Vanilla

Substitutions and Additions

  • Sour cream: You can use plain greek or regular yogurt as a substitute.
  • Sprinkles: If youโ€™re making these cookies around the holidays or you want a themed cookie, you can dress them up for the holidays by simply changing the color of the sprinkles instead of using rainbow jimmies. You can also omit the extra sprinkles if you like, although the cookies wonโ€™t turn out quite as colorful (I think the pop of color makes them look pretty).

How to Make Funfetti Cookies Recipe Using Cake Mix

This Funfetti Cookie recipe is quick, easy and deliciously fun, especially because we are using a cake mix! The bright colors, soft center, and crispy edges make the perfect cookie with the prettiest appearance.

  1. Mix the cake mix, sprinkles and baking soda until combined.

  2. Add sour cream, eggs and vanilla and mix until completely combined and a slightly thick dough is formed.

  3. Drop heaping tablespoons of the cookie dough onto a parchment-lined baking sheet. Top each cookie with additional sprinkles if desired.
    Pro Tip: Using a 1 inch cookie scoop will bake more uniformly shaped cookies.

  4. Bake in a 350 degree oven for 9-12 minutes.
    Pro Tip: Cookies are done baking if you can tap the top of the cookie without it collapsing. They should be lightly golden on the top and edges.

  • Donโ€™t over-mix the batter. If you do, the cookies will be dense, hard, and not as delicious as light and fluffy as you want. 
  • Donโ€™t over-bake the cookies. They will become hard and dry if you bake them too long, so keep a close watch. Take them out when they are still quite soft, as they will continue to bake for about two minutes on the cookie sheet after being removed from the oven. 

Storage Tips

  • To Store: After completely cooling, store any leftover cookies in an airtight container at room temperature for up to 3 days. After 3 days they will likely begin to dry out and lose their flavor. 
  • To Freeze: These cookies can easily be frozen if you have extras. Let them cool completely after baking, then freeze them in an airtight container for 8-12 months.
  • To Thaw: To thaw, remove from freezer and let sit in a single layer at room temperature for 2 hours before serving.

  • 15.25 ounces funfetti cake mix
  • ยฝ cup sprinkles
  • ยฝ tsp baking soda

  • 2 large eggs
  • 1 tsp vanilla
  • Additional sprinkles, optional garnish

    Instructions
     

    • Preheat the oven to 350 degrees F and place parchment paper or a baking mat on a large cookie sheet.
    • In a large stand mixer, mix together the cake mix, sprinkles and baking soda just until combined.
    • Add in the sour cream, eggs and vanilla and mix until completely combined, about 1-2 minutes. This will form a slightly thick dough.
    • Drop the dough in heaping Tablespoons onto the prepared baking sheet, or use a 1 inch cookie scoop to get more uniformly shaped cookies.
    • Add additional sprinkles to the top of each cookie, optional.
    • Bake for 9-12 minutes or until the cookies are lightly golden on the top and edges. You should be able to tap the top of the cookie without it collapsing.
    • Remove from the oven and cool on the cookie sheet for 2-3 minutes before removing to a cooling rack.
