All you need are 5 simple ingredients and a box of cake mix to make these delicious Funfetti Cookies! These cake mix cookies are ready to eat in under 30 minutes!
Preheat the oven to 350 degrees F and place parchment paper or a baking mat on a large cookie sheet.
In a large stand mixer, mix together the cake mix, sprinkles and baking soda just until combined.
Add in the sour cream, eggs and vanilla and mix until completely combined, about 1-2 minutes. This will form a slightly thick dough.
Drop the dough in heaping Tablespoons onto the prepared baking sheet, or use a 1 inch cookie scoop to get more uniformly shaped cookies.
Add additional sprinkles to the top of each cookie, optional.
Bake for 9-12 minutes or until the cookies are lightly golden on the top and edges. You should be able to tap the top of the cookie without it collapsing.
Remove from the oven and cool on the cookie sheet for 2-3 minutes before removing to a cooling rack.
Enjoy warm or cooled!

Storage :
To Store: After completely cooling, store any leftover cookies in an airtight container at room temperature for up to 3 days. After 3 days they will likely begin to dry out and lose their flavor.
To Freeze: These cookies can easily be frozen if you have extras. Let them cool completely after baking, then freeze them in an airtight container for 8-12 months.
To Thaw: To thaw, remove from freezer and let sit in a single layer at room temperature for 2 hours before serving.
Tips:
Don’t over-mix the batter. If you do, the cookies will be dense, hard, and not as delicious as light and fluffy as you want.
Don’t over-bake the cookies. They will become hard and dry if you bake them too long, so keep a close watch. Take them out when they are still quite soft, as they will continue to bake for about two minutes on the cookie sheet after being removed from the oven.
