How to Make Mojito Popsicles
- Make The Mixture: Add all liquid ingredients to a large pitcher and mix well.
- Prepare The Popsicles: Pour the mixture into the popsicle molds. Add 4-5 mint leaves to each mold cavity, and place the tops over the pops and insert the sticks. Freeze for 6 hours to overnight.
Pro Tip: Use a popsicle stick to push the leaves toward the bottom of the mold. They will naturally float but you can arrange them slightly with this technique. - Serve: Serve frozen and enjoy!
How to Make your Own Simple Syrup
Simple syrup disperses sweetness evenly throughout beverages of any temperature, making it a key component of many iced drinks and cocktails. While I love the ease and convenience of making my frozen mojitos with store-bought simple syrup, you certainly can make your own.
To make homemade simple syrup, add sugar and water to a small saucepan and stir until the sugar is dissolved. Let it cool, and then follow the directions above.
Tips For Making The Perfect Mojito Popsicles
- These popsicles will melt quicker than usual when left at room temperature or higher due to the alcohol. Be sure to keep popsicles over ice when enjoying.
- When pulling these popsicles from the mold, be sure to wiggle the popsicle back and forth a bit to better release them.
- For an even heavier mint taste, chop the mint leaves up before adding them to the popsicles.
- This recipe works best when chilled overnight.
- This mold comes with popsicle sticks and was used inside the recipe.
How to Store Mojito Popsicles
- To Store: Mojito popsicles can be stored in the freezer for up to 3 months.
