Combine the club soda, simple syrup, lime juice, and rum together in a large mixture. Mix well to fully combine.
Add mixture to traditional popsicle molds. See mold used in recipe in the notes below. Fill the mold up about 1- ½ in from the top.
Add 4-5 mint leaves to each mold cavity. Use a popsicle stick to drown the leaves, pushing them toward the bottom of the mold. They will naturally float but you can arrange them slightly with this technique.
Place the top of the mold over the popsicles and insert popsicle sticks.
Carefully place inside the freezer and allow to chill 6 hours or overnight.
Remove popsicles from the mold by pulling up on the popsicle stick. Enjoy!

Storage:
To Store: Mojito popsicles can be stored in the freezer for up to 3 months.
Tips:
These popsicles will melt quicker than usual when left at room temperature or higher due to the alcohol. Be sure to keep popsicles over ice when enjoying.
When pulling these popsicles from the mold, be sure to wiggle the popsicle back and forth a bit to better release them.
For an even heavier mint taste, chop the mint leaves up before adding them to the popsicles.
