This ice cream cake is an easy-to-assemble, mouth-watering mash-up of the traditional s’mores tastes transformed into a cold frozen treat with an icebox cake texture.
Unlike the campfire classic, this no-bake smores dessert does not have a graham cracker base but instead mixes the cookie as crumbles with the chocolate and marshmallow and spreads it in the middle of ice cream sandwiches.

- Make The S’mores Mixture: Combine the whipped topping, marshmallow cream, and mini marshmallows. Mix in crushed graham crackers and chocolate pieces.
- Assemble: Lay the ice cream sandwiches side by side in the bottom of the baking dish. Spread the s’mores mixture over ice cream sandwiches, and top with another layer of ice cream sandwiches.
Pro Tip: You may have to cut an ice cream sandwich in half for them to cover the bottom of the dish evenly. - Cover The Cake: Spread the whipped topping over the ice cream sandwiches and top with mini marshmallows, graham cracker crumbs, and Hershey bar pieces.

S’mores Ice Cream Sandwich Cake
Ingredients
- 18-20 vanilla ice cream sandwiches
- 16 ounces (2 8-ounce) tubs frozen whipped topping thawed at room temperature, divided
- ½ cup mallow cream
- 10 ounces bag mini marshmallows divided
- 1½ cups crushed graham crackers divided
- 1½ cups Hershey bar pieces divided
Instructions
- In a large mixing bowl, combine 1 tub of whipped topping, mallow cream and about ¾ of the mini marshmallows. Mix until fully blended.
- Add in all but a handful of the crushed graham crackers and Hershey bar pieces. Mix thoroughly and set aside.
- In the bottom of a 9×13 baking dish, lay the first layer of ice cream sandwiches flat, flush, and side by side one another. You may have to cut an ice cream sandwich in half for them to cover the bottom of the dish evenly.
- Pour the mixture over ice cream sandwiches and spread evenly using a rubber spatula.
- Top with remaining ice cream sandwiches, covering the S’mores mixture completely.
- Add the remaining tub of whipped topping over the ice cream sandwiches and spread evenly with the rubber spatula.
- Top with the remaining mini marshmallows, graham cracker crumbs and Hershey bar pieces.
- Cover and place inside the freezer for 6 hours or overnight before serving.
