Mornings just got a whole lot easier with these Freezer Breakfast Burritos! Scrambled eggs, breakfast potatoes, veggies, and melted cheese are wrapped in a soft tortilla for the perfect make-ahead breakfast item.
1poundbacon or breakfast sausagecooked and crumbled
4tbspbutterdivided
2cupsfrozen diced potatoes
1green bell pepperdiced
1large red oniondiced
12large eggs
¼cupmilk
1tspsalt
½tspblack pepper
2cupscheddar cheeseshredded
8burrito sized tortillas
Salsa,Fresh cilantroOptional
Instructions
Cook and crumble bacon or breakfast sausage, set aside.
Melt 2 tablespoons of butter. Sauté potatoes, onions, and bell pepper over medium heat for 5 minutes. Set aside.
Melt 2 tablespoons of butter. Combine eggs and milk, season with salt and pepper. Scramble the egg mixture over medium heat for 5 minutes.
Assembly: Lay out a tortilla. Add 2-3 tablespoons of cheese. Layer the scrambled eggs, potatoes, and vegetables.
Tuck both ends of the tortilla, then roll tightly.
Cover with aluminum foil and place into a plastic freezer bag.
Repeat until all burritos are assembled.

Storage:
To Store: If you don’t plan to freeze your burritos right away you can keep the breakfast burritos refrigerated in an airtight container for up to 3 days. You can store them this way after they have been thawed as well.
To Freeze: Freeze burritos wrapped in foil and placed into an airtight freezer container. Your burritos can be frozen like this for up to 1 month.
To Reheat: You can reheat burritos in the microwave or oven. In the microwave: remove aluminum foil. Heat for (4) minutes, turn over half-way through for even heating. In the oven: bake for 30 minutes at 400 degrees.
