Dunkin Omelet Bites
Copycat Dunkin Omelet Bites look like mini donuts made with eggs, meat, veggies, and cheese. The perfect protein-packed breakfast for on-the-go fuel.

Ingredients
4
large eggs
¼
cup
milk
½
teaspoon
table salt

teaspoon
black pepper
¼

diced bell peppers
your choice of color; I chose a combination of red and green
¼
cup
diced onions

diced cooked bacon or sausage
cooked and crumbled -or- diced ham
¼
cup
freshly shredded mild cheddar cheese
you can substitute sharp cheddar, Monterey jack cheese, or even shredded pepper jack cheese
Instructions
Preheat your oven to 350°F (175°C). Spray a donut-shaped muffin tin with cooking spray.
In a bowl, whisk together the eggs, milk, salt, and pepper.
4 large eggs,
¼ cup milk,
½ teaspoon table salt,
¼ teaspoon black pepper
Distribute the diced bell peppers, onions, and meat evenly into the muffin cups.

¼ cup diced onions,
¼ cup diced cooked bacon or sausage
Pour the egg mixture into each muffin cup, filling them about ⅔- ¾ full.
Sprinkle shredded cheddar cheese on top of each cup.
¼ cup freshly shredded mild cheddar cheese
Bake for 20-25 minutes or until the omelet bites are set and slightly golden.
Allow them to cool for a few minutes. Gently use a butter knife to remove the omelet bites from the muffin tin.
Notes
Storage:
To Store: Let the eggs cool to room temperature and then store them in an airtight container in the fridge for up to three days.
To Freeze: You can freeze omelet bites in an airtight container or freezer-safe plastic bag for up to two months.
To Reheat: Reheat in the microwave for 30 to 60 seconds.
Tips:
Feel free to use store-bought bacon bits in your egg bites if you don't have time to cook and crumble your own.
Use freshly shredded cheese for the best taste with fewer preservatives and chemicals.
I find it easiest to use a butter knife to remove the omelet bites from the muffin tin.
