This dish seriously takes 15 minutes, start to finish! 1cuphomemade or store bought pad thai saucesee link in post for homemade
1egg
¼cupchopped peanuts
¼cupgreen onions
2tbspcanola oil
¼tspsalt
¼tspgarlic powder
1lime
Instructions
Fill a pot with water and turn heat to high. When water boils, add rice stick noodles. Cook 5-6 minutes, or until tender, but still has a bite. Drain and set aside.
While noodles cook, add oil to a large skillet and heat to medium/high heat. Sprinkle salt and garlic powder on the chicken and then add to pan once hot. Cook on both sides, 3-4 minutes, or until cooked through. Remove from pan.
After chicken is removed, crack an egg into the pan. Let cook for 1 minute, then scramble into large pieces. Add noodles and sauce to the pan. Toss until all is well coated. Let noodles slightly stick to pan, so get that "fried" texture, and then continue to stir for 1 to 2 minutes. Add chicken and then garnish with peanuts and green onions. Squeeze juice of 1 lime over the top.
