Instructions
Line an 8x8 pan with aluminum foil. Allow the aluminum foil to overhang the sides of the pan. Lightly spray the foil with non-stick spray. Set aside.
In a medium saucepan, on medium-low heat, melt the white chocolate chips, sweetened condensed milk, and butter. Be sure to stir often to avoid burning the white chocolate chips. This should take 5-6 minutes.

Once the mixture is smooth and fully melted, remove it from the heat and stir in the clear vanilla extract and the green gel food coloring being sure to stir the fudge until no green streaks remain from the food coloring. You want your Grinch fudge to be uniform in color.
¾ teaspoon clear vanilla extract, ¼-½ teaspoon gel green food coloring
Working quickly, spread the fudge into the prepared pan and spread it into an even layer.
Add five rows, of five each, of the extra-large red candy hearts. The hearts should be spaced out about ½-¾ inches apart. You want to make sure that when you slice your Grinch fudge into pieces, that each square has a single heart on it.

Allow your fudge to cool on the counter before placing it into the refrigerator to set up and chill fully.
Once ready, gently lift the fudge out of the pan (using the overhanging aluminum foil as a handle) and slice the fudge into 25 pieces.

Storage:
To Store: This Grinch Fudge can be stored in an airtight container on the counter or in the refrigerator for up to 2 weeks.
To Freeze: You can freeze this Grinch fudge tightly wrapped for up to two months. However, when you thaw it in the refrigerator, it may cause the red heart candies to bleed from the added moisture from the freezer and the refrigerator.
Tips:
The Wilton brand JUMBO red heart candy sprinkles are approximately ½ inch in diameter. If your heart sprinkles are not that large, you can cut smaller serving-size pieces and place your hearts accordingly onto your warm fudge to garnish.
I like to use the Americolor Brand Gel Food coloring for its consistency and variety of colors available. Keep in mind that different brands of green will yield different final results of the “Grinch” color of your fudge.
Make sure you are using a gel, not liquid, food coloring. Liquid-based food colors can alter the texture of your fudge or even cause the chocolate to seize up when mixed in.
I like to use a small plastic spatula or spoon to scrape out all the sweetened condensed milk from the can. I find that if you just pour it out, you can inadvertently leave a couple of tablespoons of it in the can.
Be sure you use sweetened condensed milk and not evaporated milk. Your fudge will not set if you use evaporated milk.
To cut your fudge, it’s best to use a large chef knife. You can warm the knife by running it under warm water, then dry it off with a towel before slicing.
