Instructions
Lightly spray an 8x8 baking pan with nonstick spray. You can use your fingers to evenly rub the spray over the bottom and sides of the pan as you do not want to overspray the pan, or your jello roll ups will be greasy.
To a medium, microwave-safe mixing bowl, add the boiling water and flavored jello gelatin. Whisk to fully dissolve the gelatin.
½ cup boiling water, 3 ounces packet of flavored Jello gelatin
To the bowl of gelatin, add the mini marshmallows and stir to coat all the mini marshmallows in the gelatin.
1½ cups mini marshmallows
Heat the bowl of flavored gelatin and mini marshmallows for 30 seconds in the microwave on high heat. Remove the bowl from the microwave and whisk until all the mini marshmallows have dissolved into the gelatin and the mixture looks light and frothy.
Pour the mixture into the prepared 8x8 pan.
Refrigerate the pan of jello roll ups for a minimum of 1 hour or until the gelatin has firmly set.
Carefully run a butter knife around the edges of the pan to loosen the jello from the edges. Gently pull up one corner of the sheet of firmed Jello roll up and pull to lift the sheet of jello out of the pan. Place the sheet of jello roll up onto a sheet of parchment paper, fluffy marshmallow side up so that it is ready to roll up and slice. Be sure that your parchment paper is slightly larger than the pan of Jello roll ups.
Starting at one end of the Jello square, gently roll the jello into a spiral until you have a log.
With the seam side down of the Jello roll up, slice the log into 12 (approximately ½ inch) slices. Be sure to use a sharp knife to get nice, clean slices.
Transfer the Jello roll ups to a plate and serve.

Storage:
To Store: These Jello roll ups should stay refrigerated until ready to serve. You can store these in an airtight container in the refrigerator for up to 1 week.
To Freeze: I do not recommend freezing as the texture of these Jello roll ups seems to change once thawed.
Tips:
After you have very lightly sprayed the pan, I like to use my fingertips to spread the cooking spray evenly over the bottom and sides of the pan. This ensures that you do not have too much spray in the pan, as that can leave a greasy film on the roll ups once set. Greasy roll ups are gross!
Make sure you are using fresh mini marshmallows. If your marshmallows are old or stale, they will not melt well for this Jello roll up recipe.
If your Jello roll up log is too sticky when slicing, you can lightly spray the sharp knife with nonstick spray to make it easier to get nice, clean slices.
If you prefer your fluffy marshmallow layer to be a little thinner, you can reduce the amount of mini marshmallows to 1-1¼ cups.
A wire whisk works best for mixing the mini marshmallows into the hot flavored gelatin, as the whisk creates air in the mixture, which helps give that beautiful fluffy top layer when chilled.
A 1000-watt microwave was used for this recipe. If your microwave is different, then you may need to adjust your time between 25-35 seconds to heat the mini marshmallows.
I find that storing these in a glass container, with a piece of parchment paper between the layers, works best to keep these Jello roll ups from sticking to one another.
