Peanut Butter Cookie Brownie Bars are the best bite of 2 desserts combined into one sweet treat. It is so quick and easy to make soft and chewy brownies that bake beneath peanut butter cookie batter.
17.2-ounce packetpeanut butter cookie mix (plus ingredients on package)
¼cupReese’s piecesplus more for sprinkling
118-ounce boxbrownie mix (plus ingredients on package)
Instructions
Place parchment paper with high edges in a 7x11 casserole dish and preheat oven to 350F degrees.
Start with making your peanut butter cookies in a medium to small bowl with the ingredients on the packet.
Stir in ¼ cup of Reese’s pieces, reserving some to sprinkle later, and set aside.
Following the brownie mix directions, make your brownie batter, and pour into a 7x11 dish. Note: you may need to spread around the batter to fit edge to edge.
Lightly sink flattened cobblestone-like cookies into the brownie batter with the cookie dough.
Add any additional Reese’s pieces to the exposed brownie parts, if desired.
Bake for about 35-40 minutes, until the brownies come out clean but moist when a toothpick is inserted.
Place 7x11 dish on a wire rack. Allow the cookie bars to fully cool before removing; this makes it easier to remove them from the dish and allows them to cut better.
Serve on their own or with a glass of milk.

Storage:
To Store: Store cooled Brookies in a closed container at room temperature for 2-3 days. You can also store them in the fridge for 4-5 days.
To Freeze: You can freeze these bars in a freezer safe container or zip loc bag for up to 3 months.
Tips:

Serve this as a snack with a glass of milk or simply on their own.
