Use a stand or hand mixer to beat the creamy peanut butter, salted butter, granulated white sugar, and salt together in a medium sized mixing bowl, until fully combined.
Gradually beat in the powdered sugar on a low setting until you have a soft dough.
Set out a large sheet pan that will fit in your freezer and line it with parchment paper.
Scoop out ½ Tablespoon of the peanut butter mixture and roll it into a ball.
Use two pretzels to create a sandwich with the peanut butter ball and gently press the pretzels towards each other until you create a ½ inch thick sandwich. Repeat with the remaining peanut butter dough, it should make about 36 sandwiches.
Place all 30 sandwiches on the prepared sheet pan and freeze for 30 minutes (you can also use the refrigerator for this step).
Once the sandwiches have set, place the dark chocolate chips in a microwave safe bowl and microwave them in increments of 15 seconds until fully melted, about 2-3 minutes total. Be sure to stir in-between each interval so that your chocolate doesn’t seize up.
Once the chocolate has melted, dip the peanut butter pretzel sandwiches halfway into the chocolate and then set them back on the parchment paper and sprinkle them with sea salt, optional.
Once all bites are finished, return the sheet pan to the freezer for 15 minutes to allow them all to set.
Serve immediately or store in the refrigerator until ready to serve. Serve chilled.

Storage:
To Store: Keep these pretzel bites in the refrigerator in an airtight container or a plastic bag. They will last for 1-2 weeks.
To Freeze: You can freeze your pretzel bites in a freezer-safe container for up to three months and serve them frozen or place them in the refrigerator to soften first.
Tips:
You can make these pretzel bites with any shape of pretzel, but keep in mind that they are sandwiches so I wouldn’t try this with pretzel sticks or pretzel rods.
Make sure your sheet pans are lined with parchment paper before you start to help keep these bites from sticking and also with cleanup.
It may be difficult to fit all 36 bites on one large sheet pan, or to fit your sheet pan in the freezer. If that’s the case, feel free to use two or more smaller sheet pans.
