Pizza quesadillas are a kid-friendly dish that requires just 4 ingredients and take 5 minutes to make. Warm melted cheese and pepperoni slices are enveloped inside a tortilla that’s grilled to crispy perfection.
Spray the surface with cooking spray and place one tortilla on the heated surface.
Top the tortilla with ¼ cup of the shredded cheese and allow to melt.
Once the cheese is melted, top with sliced pepperoni and ¼ cup of sauce.
Sprinkle another layer of cheese, top with a second tortilla and flip once the bottom layer is crispy and golden.
Cook the opposite side until golden brown.
Use a pizza slicer or knife to slice and serve. Serve with remaining marinara for dipping.

Storage:
To Store: Wrap any leftover quesadillas tightly in plastic and place in an airtight container for up to 3 days.
To Freeze: You can freeze your quesadillas for a quick and easy snack or lunch. Wrap tightly in plastic, then foil. Place in a freezer Ziploc bag for up to 2 months. Let thaw before reheating.
To Reheat: For a crispier quesadilla, I recommend reheating on your griddle or skillet. However, if you’re in a hurry you can pop it in the microwave to reheat as well.
Tips:It might seem like you’re adding too much cheese, but the second layer is necessary for keeping the quesadilla together when flipping and slicing.
