1⁄2 cup shredded Monterey jack or pepper jack cheese
1cooked chicken breast shredded or cut in cubesdivided

refried beans *optional or vegetarian substitute
Non-stick or olive oil spray for cooking
guacamolesalsa, sour cream, jalapenos, and cilantro for serving.
Instructions
Preheat the waffle maker.
Prepare fillings while the waffle maker is heating. Shred cheese, chop vegetables, etc.
When the waffle maker is heated, spray the surface with non-stick cooking spray.
Lay one tortilla on the waffle maker add a 1⁄4 cup of Monterrey Jack cheese followed by the toppings of your choice and finish with 1⁄4 cup of cheddar cheese. Add a second tortilla to the top to cover the fillings and cook for 3 minutes or until golden and heated through.
Using a silicone spatula, carefully remove the quesadilla from the waffle iron and transfer it to a 200-degree oven or toaster oven while you prepare the second tortilla.
When both quesadillas are ready, transfer them to a cutting board and cut them into pie-shaped slices. Serve with your favorite condiments like salsa, guacamole, sour cream jalapenos, or hot sauce, and enjoy!

Storage:
To Store: Wrap any leftover quesadillas tightly in plastic and place in an airtight container in the fridge for 2-3 days.
To Reheat: To reheat your quesadillas, place in a toaster oven or oven until heated through.
Tips:
Resist the urge to overstuff your tortilla! Adding a lot of wet ingredients, like tomatoes, will leak out of the waffle maker and make a mess on your countertop. Overstuffing cheese will release a lot of oil residue as well.
You can sauté the peppers ahead for extra flavor and less liquid being released in the quesadilla. This will help eliminate a soggy quesadilla.
Watch for the golden waffle marks to appear on the tortilla. Waiting for an overall brown color on the tortilla will result in an overcooked quesadilla.
Nonstick spray is critical for easy cleanup of your waffle maker. Use a silicone spatula to remove any debris before cooking the next quesadilla.
This recipe can easily be doubled and quadrupled for the family. Everyone can assemble their own and cooked quesadillas can stay warm in a 200-degree oven until they are all ready!
