Ritz Churro Bites are baked in the oven until candied and sprinkled with cinnamon sugar. Easy to make in the oven, they taste delicious like your favorite fried dough dessert.
Preheat the oven to 350°F. Line a baking sheet with 2 layers of heavy-duty aluminum foil.
Spread the Ritz bits crackers in a single layer on the prepared baking sheet. Set it aside.
Add the butter, light brown sugar, vanilla extract, and ½ teaspoon cinnamon to a 2 to 3-quart heavy-bottomed saucepan over medium-high heat. Bring to a low boil for 1-1½ minutes. Be sure to stir frequently.
Remove the saucepan from the heat. Carefully spoon the butter mixture over the layer of Ritz bits crackers. Use tongs or a silicone spatula to “toss” the crackers until well coated. Bake for 10 minutes.
Add the granulated sugar and ground cinnamon to a small mixing bowl. Stir to combine. Set it aside.
Remove the cracker from the oven. Sprinkle the cinnamon and sugar over the crackers. Allow to cool completely. Once cooled, “break” the churro bites apart. Serve once completely cooled.

Tips:
If you don't want to make your own cinnamon sugar mixture, you can buy a bottle of cinnamon sugar at your local grocery store.
If you choose to make your churros with margarine, ½ cup of margarine is equivalent to about one stick of butter.
You do not need to refrigerate the Ritz Churro Bites to keep them fresh.
